You know what’s better than one spread? Having TWO spreads! Yes, it’s
true: we have created a new condiment called Jaew Truffle Spread. It
contains the same three elements like our previous spread (sweet, spicy,
addictive), but this one includes truffles. This new spread is infused with the
characteristic flavour and aroma of the Summer Black Truffle (Tuber
Aestivum), sourced from the Abruzzo Mountain region in Italy. It has the
perfect balance of complexity and brightness. Not to mention that it does
not compromise the tasty umami depth of our original recipe. In fact, our
Jaew Truffle Spread is best for the sophisticated hot sauce connoisseur.
Some people might be wondering as to why we went with a truffle spread?
Well, let’s tell you why, along with the origin of truffles.
Black Truffle Origin (Tuber Aestivum)

The burgundy truffle (Tuber uncinatum) is one of the most expensive
gourmet foods in the world. Tuber Aestivum (also known as the summer
black truffle) can be found throughout the entire year and is known for
originating in most of Europe. It can be found in mostly Mediterranean
climates, like Spain, Italy, and Southern France. Both these species are
closely related, with their level of habitat being their only difference. In the
months of October and November, tuber aestivum harvests at a much higher quality and is more fragrant. The summer black truffle grows with
oak and holm oak in Spain, while the Burgundy truffle grows with oak,
hazel, pine, lime, and cedar. So, which truffle cultivates at a more
successful rate? That would be the summer black truffle because it is less
demanding in weather and ecology terms. In addition, it is broad in
geographical area and its population diversity, making it more successful to
cultivate than the burgundy truffle. Yes, this is a lot of scientific information
to absorb, but all this to say that although truffles (no matter the type) are
extremely hard to find and are expensive, they are highly valued in foods,
which is why we incorporated it in our new spread.

Inspiration
The price of truffles are a definitive giveaway as to you getting real or
chemically-manufactured truffles (fake). If it sounds too cheap to be real, it
is. Also, you should consider the location of where you are getting truffles.
Unless you are at a great restaurant with a stellar reputation, you should
consume truffles where they naturally grow. This is because truffles have a
very complex nature. Black truffle, for example, is one of the most desired
types of fungi in the world. You can locate them throughout Europe, but
Périgord (France, east of Bordeaux) is known to be the “black truffle
kingdom.” The best time to hunt for black truffles is November to April. If the price seems suspicious or too good to be true, that can mean it is
indeed fake. Lastly, although Tuber Aestivum (summer black truffle) is less
powerful than black winter truffles, they are a whole lot cheaper. This is
mostly because summer black truffles are harvested in the summertime
(you probably knew that since it’s in the name), so they are fresh for almost
a quarter of the cost. Tuber Aestivum is typically located in Tuscany, Italy.
Many people can reproduce something fairly easily in today’s times, so it is
important to be extra careful as to what you’re consuming, especially
truffles.

Inspiration

We wanted to infuse the characteristic flavour and aroma of the summer black truffle to render a prized one of a kind Jaew Chili Spread without compromising the sweetness, spice and addictive flavor of our original recipe. Our new Jaew Truffle Spread really caters to the sophisticated hot sauce connoisseur — carrying the perfect balance, complexity and
brightness to complement your best dishes. With evolving taste buds and a growing trend for flavour and spice, we wanted to create a unique yet versatile product which would appeal to Toronto’s multicultural food scene and that is what we did with our Jaew
Truffle Spread.
